Smoothies Again~Rachel Holbert Jones Memphis TN aka Sassygrrl32



I just wrote another post on my wordpress blog Car Tripping about smoothies. I just started back drinking smoothies for health reasons that I will talk more about on my other wordpress blog dedicated to mostly personal topics and subjects of interest. Today I made a pumpkin smoothie but here I will include a recipe for a strawberry smoothie. But first I will tell you what's in my pumpkin smoothie. It has been a long time since I made these smoothies so it didn't turn out as well as I'd hoped but not bad for a four year hiatus.

Here it is: I added half of a small can of pumpkin, about 6 or 7 small chunks of fresh pineapple, a handful of frozen mixed fruit(it had mango, papaya, pineapple), 7 or 8 small pieces of sliced fresh strawberries, 2 bananas, 3 teaspoons of plain greek yogurt, roughly 2 cups of unsweetened vanilla almond milk, a quarter cup of bottled water, a half cup of 2% milk and 3 packets of splenda.

When I got done it was actually a lot thinner than I had planned on but the last time I made a pineapple/banana smoothie it ended up too thick so I could have used a lot less milk but I like mine a little thinner because after I refrigerate it it thickens up and I have to add almond milk to it which is the milk I prefer. I don't particularly like cows milk in smoothies but will use it in a pinch. I'm semi vegeterian but not vegan so I do eat dairy, fish and occasionally chicken or even beef but very seldom plus I like plain greek yogurt. I started that a few years ago after I had some sugar issues.

You can adjust according to how much liquid you like. Some like more water, maybe more pineapple and of course you can use whatever kind of milk you prefer. I used to use soymilk and it actually is my favorite for smoothies but it has far more calories and I don't mind unsweetened almond milk. I prefer vanilla and with added splenda it is good. Today was a test and I needed to use less pumpkin and less almond milk. I think before when I made it I used soymilk maybe a mix of soy and almond or maybe I added coconut. I always liked it too but over the past few years I like it less and less. Here's a recipe for a strawberry smoothie:

  • 2 cups frozen strawberries
  • 1 banana (room temperature)
  • ¼ cup Greek yogurt*
  • 1 cup milk (or almond milk or oat milk)
  • 1 ½ tablespoons maple syrup, honey, or agave syrup
  • ½ cup ice
  • Optional add-ins: 1 tablespoon almond butter, ¼ teaspoon vanilla, fresh mint leaves or basil leaves

  • Place all ingredients in a blender, breaking the banana into pieces. Blend until creamy and frothy, stopping and scraping down the sides as necessary. If desired, garnish with a frozen strawberry and mint sprig. Serve immediately or store in a covered jar in the refrigerator for 2 days.
